La badiane (ou anis étoilé) est une épice issue des fruits séchés de l’arbre Illicium verum, originaire d’Asie (principalement de Chine et du Vietnam). Voici une description détaillée :
Apparence
Les fruits ont une forme d’étoile à 6-8 branches, chaque branche contenant une petite graine brillante à l’intérieur.
La couleur est brun-rougeâtre.
Goût et arôme
Son goût est légèrement sucré et rappelle celui de l’anis, avec une intensité plus marquée.
Son arôme est chaud, épicé et légèrement réglissé.
Utilisations
Cuisine : Utilisée dans les plats sucrés (compotes, pâtisseries) et salés (bouillons, currys, viandes). Elle est également une composante du mélange d’épices 5 parfums chinois.
Boissons : Ajoutée aux thés, vins chauds ou infusions pour son parfum unique.

Store at room temperature away from light and humidity in an airtight container, preferably glass, or ideally in the doypack bag supplied with the vanilla pods. Stored correctly, vanilla pods can be kept for several years while preserving their aromatic quality.
